Easy Holiday Appetizers – Week 2
Onion dip has always been a staple at my party table, whether it’s a backyard BBQ, Tailgating at a Jets game (Go Jets!) or Christmas Eve, it’s a house fav!
Historically I have taken a pouch of Liptons Onion Soup Mix and a medium container of sour cream, put them in a bowl and stirred until there were no more brown clumps of powder – voila, dip! While it only takes about a minute and a half to make, I know that the time saved will just be spent guzzling water and in the bathroom, trying to rid myself of the bloat that has been caused by all the added sodium in the packet. Instead, let’s take the extra 15 minutes to elevate our game this holiday season, while at the same time making healthier choices, and impressing our guests (and ourselves), by using fresh ingredients!
Ingredients:
2 large yellow onions
4 tbsp unsalted butter
1/4 cup olive oil
1/4 tsp cayenne pepper
1 tsp kosher salt
1/2 tsp fresh ground pepper
4oz cream cheese at room temperature
1/2 cup sour cream
1/2 cup good mayonnaise (CF Tip: I use Kitchen Primal avocado oil mayo – no chemicals, just eggs, avo oil, vinegar, salt and rosemary)
Directions:
- Cut onions in half. Next, with flat side of onion down on cutting board, slice onions in 1/8” thick half rounds (you’ll have ~3 cups of onions)
- Heat the butter and oil in large sauté pan over medium heat.
- Add the onions, cayenne, salt and pepper and sauté for 10 minutes. Stirring occasionally to evenly coat the onions.
- Reduce heat to medium-low and cook, stirring occasionally, for 20 more minutes until onions are browned and caramelized.
- Go get ready to Par-TAY💃🏻 while the onions cool.
- Place cream cheese, sour cream and mayo into bowl of an electric mixer (or a bowl and use a spoon, but be prepared to get a good arm workout 💪🏼) and beat until smooth.
- Add the onions to bowl and mix well.
- Taste! Taste! Taste for seasoning! Add more cayenne, salt and/or pepper as necessary.
- Serve at room temperature along with baby carrots, cucumber wedges, cauliflower florets or any of your favorite veggies – they all work!
