Yes, you read that right, breakfast COOKIES!!! Who hasn’t dreamed of the day when it was OK to eat cookies for breakfast?! For me, my favorite kinds of cookies are usually best when they’re warm, they’re usually chewy, and have just a little bit of sweetness. These make-ahead oatmeal cookies check all the boxes โ โ โ and then some. With the added bonus of 18g of protein and 8g of fiber you’ll have everything you need to kickstart your day as you run out the door!
Ingredients:
- 2 cups old-fashioned oats
- 1tsp baking soda
- 2 scoops vanilla protein powder (I prefer Shakeology by Beachbody ๐ช๐ผ)
- A pinch of sea salt
- A dash or two of cinnamon
- 1/2 cup homemade applesauce – find Flawesome Foodie recipe here
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 cup Sunbutter or nut butter of your choice
- 2-3oz dark chocolate chips (optional)
Directions:
- Preheat the oven to 350F degrees
- Cover large cookie sheet with parchment paper.
- Mix all of the dry ingredients (plus chocolate chips if using) in a large bowl
- Add the egg, applesauce and Sunbutter to the dry ingredients and mix well. CF tip: I used my hands to mix everything together because the spoon wasn’t incorporating all the ingredients well enough.
- Using your hands, shape the dough into 8 large cookies (a little larger than a golf ball)
- Bake 10 – 12 minutes
- Let cool on the baking sheet and store in fridge for up to 3 days, or put in the freezer for up to one month.
Not only do I love these, my son and husband also enjoyed them for breakfast just yesterday. What a nice change from the Eggo waffles with ZERO nutritional value that they usually reach for in the morning.
