Ceviche – an appetizer of small pieces of raw fish marinated in lime or lemon juice, often with onions, peppers, and spices. Ummm…anyone else feeling a little hesitant to try seafood “cooked” only using citrus? No heat? Wondering how its possible? I totally get it, but trust me, you won’t be disappointed!!
This week we’re going to take a trip to Central America for some Belizean Shrimp Ceviche.🦐 Whether you choose to cook the shrimp in boiling water, or “cook” it in lime juice, this elevated dish will take you less than 15 minutes of prep time, leaving you more time to get yourself ready to Par-TAY! 💃🏻
Ingredients:
1 pound of raw (uncooked) cleaned shrimp – peeled, deveined, no tail
2 pounds diced ripe tomatoes
1 cucumber peeled and diced
1 large red onion diced
1-2 jalapeños pepper minced (remove seeds for less heat)
1 bunch cilantro chopped
5-6 good limes
Salt + Pepper to taste
Directions:
1. Rinse the shrimp under cold water
2. “Cook the Shrimp” – can be done two different ways:
– Traditionally, the fresh raw shrimp would be chopped, and then
marinated in lime juice for at least and hour. But since the
ocean is no where near the Dicicco’s in Millwood, I went with the
second method of cooking…with heat and boiling water!
– Flash boil the shrimp – bring water to a boil, add 1/4 cup sea salt,
place shrimp in water until shrimp begins to turn pink (~ 2-3
minutes) and then strain and put in ice bath to stop cooking and
cool quickly.
3. Prep the veggies – dice the tomatoes, cucumber, red onion,
jalapeños and cilantro and place everything in a large bowl.
4. Remove shrimp from ice bath and chop to same size as
other ingredients and place in bowl with veggies.
5. Add juice of 5-6 limes to bowl and stir to incorporate all the
ingredients to start the melding process
6. Add salt and pepper to taste and let sit for 30-40 minutes
7. Taste! Taste! Taste! Add more salt as needed
8. Serve with tortilla chips (to insure your kids will eat it!), or on
endive leaves, to elevate the dish, while keeping the crunch but
lowering the carbs.
