I love when I find a recipe that promises to be EASY and QUICK to make on a weeknight and it REALLY is! I made this Broiled Shrimp and Scallop recipe last night and not only is it a healthy choice, it takes all of 15 minutes, with the most difficult task being cutting a pint of grape tomatoes in half. I think even the most Flawesome of Foodies can handle that!👍🏼
Ingredients
- 1/4 C olive oil
- 2Tbsp butter
- 1/3C white wine
- 1 tbsp fresh lemon juice
- 1 tbsp Worcestershire sauce
- 3 cloves garlic, peeled
- Pinch dried red pepper flakes
- 1/2 tsp salt
- 1/4 tsp fresh ground pepper
- 1lb large peeled and deveined shrimp
- 1lb sea scallops (slice in half of more than 1”)
- 1 pint cherry tomatoes, halved
- 5oz fresh spinach
Directions
- Preheat broiler with rack 6” away from element.
- Place butter & oil on sheet pan, and place in oven just until butter melts.
- Remove pan from oven, and stir in wine and next 6 ingredients.
- Add shrimp, scallops, and tomatoes, tossing to coat.
- Return pan to oven, and broil 3 minutes. Stir shrimp and turn scallops; broil 2 more minutes.
- Remove pan from oven, and add spinach, tossing about 1 minute or until slightly wilted.
