Viewers Choice! My friend Michelle, fellow Flawesome Foodie, asked me to make chili this week…well Michelle, you ask, you shall receive! I made a big batch of my Mom’s chili, and there is no reason to try any other recipe. It’s super easy, has tons of flavor, it’s healthy, it satisfies the comfort food cravings we all have this time of year, and I can guarantee it will your family favorite too!
Ingredients:
- 2 lbs. 85% lean ground beef
- 1 – 32 oz Can Kidney Beans
- 1 – 15.5 oz Can Dark Red Kidney Beans
- 2 – 28 oz Can Diced Fire Roasted Tomatoes
- 2 – 14.5 oz Can Diced Fire Roasted Tomatoes
- 1 – Container Dehydrated Soup Greens (Found in Spice Aisle)
- 3 Tbsp Chili Powder
- 1 Tbsp Cayenne Pepper
- 2 Tbsp Tomato Paste
Directions
- Brown ground beef in large pot (7 ¼ Qt) on medium heat
- While beef is cooking, drain and rinse kidney beans in colander. Set aside
- When beef is fully cooked, drain oil. PLEASE be VERY careful, oil is VERY hot!
(Tip: I pour oil into one of the kidney bean cans for disposal) - Return pot to stove on medium heat and add kidney beans, 2-28oz cans of tomatoes, soup greens and give it a good stir
- Pour 2-14.5 oz cans of tomatoes in blender to make “sauce” for chili
- Pour sauce into pot and give it another good stir (working the arms today)
- Add chili powder, cayenne pepper and tomato paste
- Stir stir stir
- Bring to a boil, then simmer for about an hour covered, stirring every 10 minutes or so
- Serve immediately or save for the week
Flawesome Idea: Serve with a toppings bar – include sliced avocado, shredded cheese and sour cream…be creative, there are no limits!
