Got a cold, or just looking for some comfort food that will warm your heart, then give this homemade chicken noodle soup a try! In less than 45 minutes and using only 7 ingredients, you will be enjoying this healthy, inviting soup that will touch your soul.
Ingredients:
4 Tbsp olive oil
1 Onion, diced
3 Celery stalks, diced
4 Carrots, diced
4 cloves of garlic, minced
2 Bay leaves
4 fresh thyme sprigs
2 Quarts of chicken bone broth
2 1/2 cups rotisserie chicken, cut into 1/2″ pieces
8 oz dried egg noodles
Kosher salt and freshly ground pepper to taste
Fresh parsley to finish
Directions:
1. Place a soup pot over medium heat and coat with oil
2. Add onions, celery, carrots, garlic, bay leaves and thyme sprigs – cook and stir for ~6 minutes until vegetables are soft (not browned)
3. Pour in bone broth and season with salt and pepper, bring to a boil
4. Add the chicken and noodles and simmer until noodles are tender and chicken is warmed
5. Season with salt and pepper to taste
6. Sprinkle with chopped parsley before serving
