Elevated Holiday Appetizers – Week 3:
When I’m having people over, one of my go-to appetizers is a bowl of mixed olives, because they’re simple to make and packed with flavor. And honestly, if they’re not for anyone else, they’re definitely for me! Not only do I love the taste, they also curb my appetite, they’re filled with fiber, they make my skin glow, enhance my heart health and help me fight off cancer, all while I hover over the bowl mumbling under my breath “Olive You”❤️ While I make them for me, they’re always all gone by the end of the night, so I can’t be completely alone.
Ingredients
1/2 cup extra-virgin olive oil
1/2 tsp crushes red pepper flakes
4 springs fresh thyme
2 cloves garlic, thinly sliced
Lemon zest from half of a lemon or one strip of zest removed with vegetable peeler
2 tsp freshly squeezed lemon juice
Orange zest from half of an orange
2 tbsp fresh squeezed orange juice
Kosher salt and ground pepper to taste
2 cup mixed olives – I used Castelvetrano, Cerignola, and Gaeta (aka the big green ones, the smaller but still big green other ones, and the big red ones)…all found in your local grocery store in the antipasta bar (note: you want the ones that aren’t already in oil)
Directions
(Total time: less than 10 minutes!)
- Make sure olives are at room temperature
- Zest lemon and orange
- Heat olive oil in medium saucepan over medium heat
- Add red pepper flakes, thyme, garlic, lemon zest, orange zest, salt + pepper to taste, to the saucepan
- Cook until garlic turns pale yellow, ~2 minutes (don’t take your eye off it, garlic will burn quickly if not careful)
- Stir in olives, and cook until just warm (~2 minutes)
- Remove from heat and stir in lemon juice and orange juice
- Serve warm or room temperature in decorative jar or serving bowl. Also great for gifts 🎁and snacking!
