Have muffins, will travel! ✈️ Over the weekend I made a batch of my breakfast muffins, no sugar or flour, just fresh ingredients and deliciousness! Perfect for any day, but even better today as I sit in the airport early this morning where I would normally be faced with nothing but poor choices.
Ingredients:
- 6 carrots, peeled and grated
- 2 bananas, fork mashed
- 3/4 rolled oats
- 3 Tbsp homemade applesauce (diced apples, lemon juice, cinnamon)
- 3 eggs, lightly scrambled
- Cinnamon
- 1 tsp vanilla
Directions
- Mix all ingredients together in one bowl
- Bake at 350F degrees for ~25 minutes
- Yields 16 medium sized muffin
