Short of it jumping into your mouth as it swims upstream, this salmon recipe is the easiest meal I think I have ever made! All you need is salmon (obvi!), lemon, parchment paper and some seasonings. By baking the fish in a parchment paper pocket, the steam created by the lemon and the fish’s own moisture develops this rich and flavorful taste like no other method I’ve used. While cooking this way is a cinch for weeknights, it’s also a fun presentation for company! By making individual packets, everyone gets their own pretty parcel of goodness.
Ingredients
1 lb salmon (can be one large piece or (4) 4 oz individual servings)
2 lemons
1 tbsp olive oil
Herbs of choice – I used parsley and capers
Salt & Pepper
Parchment paper
Directions
- Preheat oven to 350 degrees F
- Place large piece of parchment paper on baking sheet
- Place salmon in the middle of paper, skin side down
- Drizzle with olive oil
- Squeeze the juice of 1/2 lemon over fish
- Add salt and pepper to taste
- Sprinkle fresh herbs/seasoning of choice – I used parsley and capers because I had them in the fridge, but could have just as easily gone with garlic, rosemary and thyme. Go with whatever combination you like – list is endless.
- Layer lemon slices on top of fish
- Here comes the hardest part of the whole recipe (not really hard at all)…grab the two long edges of the parchment paper and hold edges together. With sides together, fold down until tight against the fish (like how they wrap sandwiches at a deli).
- Then take the short edges and fold them in to keep the steam and juices from escaping.
- Bake for ~12-15 minutes or until desired doneness.
Enjoy with a side of roasted vegetables (Brussels sprouts are usually my go to) or some cauliflower rice. Imagine, in less than 20 minutes you are sitting down for a delicious and nutritious meal, which is certainly more civilized than standing in a riverbed with your mouth open 🐻
