One of the principles of 2B Mindset is “Veggies Most” which, as you may have guessed, is to fill us up! When I am traveling for work it can sometimes be hard to find interesting vegetables (or any…have you seen an airport food court lately??? 😖🤢), but today I had the most amazing cup of beet soup on my flight to CA! Yes, beet soup! Amazing enough for me to actually ask for the recipe so I could share it with you! Given the season and finally a chill in the air, I went with having it hot, but can also be served chilled for a nice cool down in the warmer months.
Ingredients:
- 2 Medium sized beets
- 1 Shallot, peeled and quartered
- 1 Garlic clove, peeled and roughly chopped
- 2 Tbsp hemp seeds
- 2 tsp Apple cider vinegar
- Sea salt to taste
- 1/4C parsley
- 1/4 – 1/2C unsweetened almond or coconut milk
Directions:
- Peel beets and cut into quarters
- Place beets, shallots and garlic in pot with 1/2” water…cover and steam until tender
- Add remaining ingredients into pot and purée until desired consistency
- taste and adjust seasoning as necessary
- garnish with diced avocado (optional)
